Why is the word c.o.c.k always blanked out. it does not always refer to a but a male bird.?

ie a pub called the & Bottle ( C.O.C.K ad bottle) refers to a male hen and a bottle which was the original sign outside the pub. If a willie had been shown it would have breached decency laws
